This 30cm traditional Japanese sashimi knife, in the Osaka/Kyoto style, has a narrow, willow leaf shaped blade designed for thinly slicing raw fish or meat that is off the bone.
While almost all western knives are used to push and cut, almost all Japanese knives are used pull and cut instead. The important principle in using a yanagi knife to prepare sashimi is not cutting down but pulling with its long blade in a single motion, as cutting in a sawing motion creates a poor cross section.
Please note: the blade of this knife is only sharpened on one side and it is designed for right handed use.
