The term Santoku, meaning "three virtues" or "three uses", refers to the cutting tasks it was designed to perform: slicing, dicing and mincing.
This is the quintessential size for a Santoku knife, and, although a little shorter than its European cousin the cook's knife, this Japanese shape of knife fulfils almost exactly the same role.
