Global Knives. A thousand years ago, Japanese swordsmiths developed the high art of sword making to provide strong, sharp blades for the Samurai, the feared warrior caste. Today, continuing the Samurai sword tradition, Japanese craftsmen are producing knives of the highest quality Global knives are manufactured by Yoshikin in Niigata, Japan.

 

Regarded by many professional and domestic cooks as the world’s best knives, Global Knives are as aesthetically pleasing as they are effective.
They are handcrafted in brand owner Yoshikin’s factory in Niigata, Japan, using precision techniques to ensure the sharpest edges and the best possible balance.

 

Why are Global knives so sharp?
The renowned sharpness of Global Kitchen knives is thanks in part to a unique type of stainless steel created exclusively for them.
It is hard enough to retain an effective cutting edge over time but soft enough to allow sharpening when required.
Global knives are also ground steeply on both sides of the blade, to a more acute angle than most western kitchen knives.
This results in a much straighter, sharper blade, the signature ‘Global edge’ – which stays that way for longer compared to bevelled edge knives.

 

Why do Global knives contain sand?
Global kitchen knives are perfectly balanced, as a result of their hollow handle design and construction.
The handle cavity is filled with the exact amount of sand to ensure a precision weighted balance.
This means every Global knife feels easy in the hand of the cook, enabling effective and efficient cutting and chopping.

 

Caring for Global knives
To ensure your Global kitchen knives stay sharp and fit-for-purpose, it’s important to look after them properly.

 

DO NOT
- Cut on tiled, glass or granite surfaces
- Attempt to cut through frozen produce or bone
- Cut with an ‘up and down’ chopping/hacking motion
- Soak or use harsh cleaning products, particularly containing bleach
- Put in the dishwasher
- Store in a cutlery drawer

 

DO
- Sharpen using a ceramic or whetstone
- Clean using mild washing up liquid and hot water
- Store using a knife block, magnetic wall rack or knife roll/case
